Celiac Disease 

Triggered by foods containing gluten, Celiac disease is a chronic immune disorder that damages the small intestine. It can cause ongoing digestive problems and prevent your body from absorbing all the nutrients it needs from food. 

Symptoms may include diarrhea, fatigue, weight loss, bloating and gas, abdominal pain, nausea and vomiting, and/or constipation. 

Gluten-Free

Years ago people did not have the panoply of gluten-free commercially available options they have today, so the disease was harder to manage. Today in stores there are far more safe and convenient choices, along with a healthy diet of fresh fruits and vegetables, beans and lentils, nuts and seeds, eggs, meat and fish, dairy products, amaranth, and buckwheat.
